Gallery by Chele is bringing Singapore's Thevar to Bonifacio Global City for a limited, two-night collaboration on Oct. 14 and 15, 2026, pairing Chef Chele Gonzales with Chef Mano Thevar for an exclusive tasting menu priced at P8,900 per guest.
The dinner has been more than a year in the making, according to Gallery by Chele, with the two chefs having long discussed the possibility of cooking together. Nearly every dish on the menu has been created specifically for the collaboration, drawing from the culinary perspectives and terroirs of India, the Philippines, Singapore, and Spain.
For diners who are curious about how this whole passport's worth of influences is going to come together in a menu, this collaboration is not to be missed. Thevar, a two-MICHELIN-starred restaurant in Singapore, is known for a contemporary approach to Indian cuisine that combines flavors rooted in the Indian culinary heritage of the Malay Peninsula with European techniques. Expect traditional tastes and ingredients with modern presentation and unexpected combinations.
One-MICHELIN-starred (and Green Star) Gallery by Chele, meanwhile, has built its dining experience around research into Filipino ingredients, techniques, and food traditions. Gallery's team regularly travels around the Philippines to document local flavors, customs, and products which are then translated into their dishes that capture indigenous culinary methods.
For two-night dinners, the shared curiosity of both chefs will come together in a menu that captures the world while remaining rooted in the distinct identities of both chefs.
